How far would you go to understand why Mexicans put chili on everything—even when they know it’ll hurt? That question hit me while eating a strangely mild pepper in Spain. How did a Mexican chili make it across the world and lose its heat? My curiosity sparked a journey that took me deep into the fiery world of chiles and reconnected me with my Mexican roots through the flavors that define our culture.
I created and directed Al Chile, a docuseries that explores Mexico’s passionate relationship with chili peppers, hosted by none other than Adrian Uribe’s El Vítor—the loudmouth we all know, who always thinks he knows more than he does. Through his irreverent lens, we dive into the heart of Mexico, where chili isn’t just a fruit—it’s a cultural icon, a daily ritual, and sometimes, a test of courage.
Over four episodes, El Vítor explores Mexico’s vast chili universe, from the fiery habaneros of Yucatán to the wild chiltepines of Sonora. But the journey doesn’t stop there. In an epic culinary twist, he travels to India to uncover how Mexican chiles took root in new lands, creating global flavors while transforming along the way.
Through laughter, tears (thanks to the heat), and unforgettable bites, El Vítor talks to chefs who describe chili as their perfect lover: passionate, unpredictable, and sometimes overwhelming. He meets farmers who treasure it like red gold and anthropologists who unearth its history with the same reverence given to ancient codices.
But Al Chile isn’t just about spiciness—it’s a story about life. Because in Mexico, chili represents the perfect blend of pleasure and pain, flavor and resilience. It’s about embracing life’s heat and knowing it’s always worth the burn.
